This is a much changed version of a recipe for a banana and walnut loaf included in the booklet that came with my bread maker. You can add more banana to the mix if you want a stronger flavour, in fact the original recipe calls for 4 medium bananas but I prefer it this way.
Banana and Walnut Loaf
60g dark brown sugar
75g butter, softened
100g wholemeal self-raising flour
125g white self-raising flour
Zest of 1 lemon
1 tablespoon lemon juice
1 ripe banana, peeled and mashed
50g walnuts, roughly chopped
Cream the butter and sugar together until smooth and beat in the egg.
Add the flours, lemon zest and juice and mix until combined. Add 1 or 2 tablespoons of milk if the dough is too thick.
Add the mashed banana, the walnuts and mix. Spoon the mixture into a cake tin lined with baking parchment or well greased and bake in a pre-heated oven to 180 ºC/Gas Mark 5 for about 40 minutes. Check with a skewer to see if the loaf is cooked.
