I love a good roast, don't you? If you replied yes to that than please allow me to suggest this lovely roast pork for your Sunday lunch.
Prepare the meat the night before or at least a couple of hours before it's time to put it in the oven.
Roast Pork Joint
Drizzle of olive oil
Good pinch of salt
Approx. 1 teaspoon of dried thyme, ground paprika, chili flakes
Cut a length of cling film big enough to wrap the pork joint and lay it out on your kitchen counter. Drizzle a little olive oil and then add the salt, thyme, paprika and chili flakes.
Make sure the pork joint is covered in this marinade and wrap tightly in the cling film. Keep in the fridge until cooking time.
To roast remove the cling film, place the meat in an oven proof dish and cook in a pre-heated oven at 180 ºC/Gas Mark 5. Cooking time will depend on the size of your pork joint, mine took about 90 minutes. Don't forget to turn the meat half way through so it's nice and brown on both sides.
Serve with roast potatoes and vegetables or salad. It also goes well with chips or white rice.
