There's been a lot of blackberry picking and crumble making in our household. Blackberry season is in full swing and with so many brambles full of them around here it'd be a shame not to make the most of the free fruit available. Have you seen the price the supermarkets charge for a small box of blackberries?
Apologies for the quality of the pictures, I know the crumble doesn't look very appetising but it really was delicious. Better than taking my word for it though is if you make one yourself, so get picking those berries :-)
For this crumble I sort of followed this recipe by Marie from The English Kitchen but as usual made a few changes as below.
Blackberries (enough to cover the bottom of a shallow ovenproof dish)
125g butter, melted
85g + 3 tablespoons demerara sugar
100g plain flour
Pinch of ground mixed spice
Preheat the oven.
In a pan mix the blackberries with 3 tablespoons of demerara sugar and cook over a low heat for a few minutes. Pour into a shallow ovenproof dish.
Mix the melted butter with the sugar, add the oats, the flour and the mixed spice and mix well together.
Spread lumps of this mixture over the blackberries and bake until filling is bubbling and the topping is golden.
